Tận dụng đầu mực bỏ đi để chế biến thành món đầu mực xào cay, giòn sần sật, vị mặn béo đậm đà, dùng làm món ăn chính cho các bữa cơm gia đình này lạnh thì rất tuyệt.
Đầu tiên đem đầu mực làm sạch, cắt nhỏ rồi rửa sạch. Đun sôi nồi nước, cho mực đã cắt vào luộc cho mực đổi màu đều và săn lại thì vớt ra để ráo nước.
Đun nóng 1 muỗng canh dầu ăn, cho 1g hạt tiêu vào rang cho thơm. Sau đó cho gừng lát, ớt khô vào đảo đều cho dậy mùi. Tiếp đến là cho đầu mực vào xào cùng.
Nêm vào 5ml giấm, 1 muỗng canh nước tương, 2g muối, 2g hạt nêm. Xào đến khi sốt cạn bám đều lên mực, rắc thêm chút mè trắng, hành lá thái nhỏ vào là được.
Đầu mực xào cay với đầu mực xào chín giòn sần sật, ngấm đều gia vị cay thơm, đậm đà ngon cơm cực kỳ. Tùy theo sở thích ăn mực chín đến đâu mà bạn có thể quyết định rút ngắn thời gian xào mực hơn dự kiến nhé!
