Ướp 150gr sườn non chặt khúc với 4 muỗng cà phê nước mắm, 1.5 muỗng cà phê bột ngọt, 2.5 muỗng cà phê đường trắng, 2 muỗng cà phê dầu ăn, 1.5 muỗng cà phê nước màu, 20ml nước lọc, 2 muỗng cà phê tương ớt, 1/2 muỗng cà phê bột ớt trong 10 phút.
Cho 1 muỗng canh dầu ăn làm nóng, phi thơm 1 muỗng cà phê hành tím, 1 muỗng cà phê tỏi và 1/2 muỗng cà phê ớt sừng băm. Cho sườn vào đảo đều cho săn 3 phút.
Thêm 400ml nước lọc vào kho 15 phút cho nước cạn 1/2. Thêm 100gr thơm và 50gr nấm, nêm thêm 1 muỗng cà phê hạt nêm vào kho thêm 5 phút cho sôi bùng rồi tắt bếp.
