Trộn đều 15gr muối còn lại với 20gr ớt bột, 20gr muối tôm, 15ml nước mắm, 10gr tỏi băm, 10gr gừng băm, 20gr đường trắng trong tô.
Sau 2 giờ, rửa sạch lại cải thảo với nước sạch, để ráo.
Cho cải thảo, hành lá cắt khúc, củ cải trắng vào 1 cái thau to. Chan đều hỗn hợp ớt bột đã trộn vào, dùng tay trộn đều.
Cho kim chi vào hũ thủy tinh hoặc hộp kín có nắp đậy, để chừng 1/2-1 ngày là kim chi đã chín. Lấy ra khỏi lọ, lưu trữ trong tủ lạnh trước khi kim chi bị lên men.
